Risotto

Risotto is one of those dishes that you don't make ahead of time. You make it while you are talking to your guests and it's part of the entertainment.  You have all of your ingredients ready, and there you are, cool, collected, creative and all you're doing is making a delicious dish right in front of your guests eyes. It's a meal and a show!

 4 Vegetable Broth
 1 cup Arborio Rice
 23 Broccoli or other vegetables, chopped into smallish pieces
 0.50 cup Wine - white is better but either will red or white work.
 0.50 tsp Salt
 0.50 tsp Pepper
 1 tsp Italian Seasoning
 2 tbsp Olive Oil
 0.50 Onion, finely chopped

Prepare veggies.

Sauté onion in olive oil for 5 minutes. Add garlic for 1 minute.

Add rice.

Sauté rice for 5-7 minutes, until browned.

Heat broth and set aside.

Add 1 cup broth and wine. Stir occasionally until moisture is mostly absorbed.

Continue to gradually add broth, until rice is ready and there is some creamy broth.

Add seasoning and Parmesan cheese and veggies and serve immediately, topped with fresh ground pepper and Parmesan cheese.
