Jill’s Green Sauce/Dip/Dressing

This is one of the best things to happen in our house in 2018. Jill found the "Magic Green Sauce" recipe from Pinch of Yum. It's so easy and so awesome! We have served it over chicken, tofu, as a dip, on a sandwich, on potatoes, and so many other ways. It's like chimichurri sauce without the bite and the smooth jazz feel of avocados!

Ingredients

 1 Avocado, Peeled and Pitted
 1 cup Italian Parsley and Cilantro (1 Cup Total)
 0.50 Jalapeño, stems and seeds removed, cut in quarters. (Add more if you want the heat!)
 4 Garlic Cloves
 12 Limes, Juiced
 0.50 cup Water
 0.50 cup Olive Oil
 1 tsp Salt
 0.50 cup Pistachios, shelled
Yields8 Servings

Directions

Place all ingredients in food processor - EXCEPT FOR THE PISTACHIOS!. Blend/Mix until smooth.

Add the pistachios. Pulse until it's the way you like it. We like to taste and feel those pistachios, so we do not over-blend.

Refrigerate until you are ready to serve!
